Weekly Meal Plan CW 12

here is another week menu for you! Lots of new recipes and cooking inspiration for you :)

What's on the menu?

- I started the week off with my parent's leftovers that resulted in a huge vegetable casserole. Similar recipe: over here.

- On Tuesday we made a super delicious creamy vegetable pasta dish with zucchini, carrots, oat cream, marinated tofu and whole-grain pasta. Super good! Similar recipe: over here.

- On Wednesday we went home for a day, and my boyfriend made a rice and vegetable stir-fry with leftover vegetables (broccoli, cauliflower, peas), red lentils and basmati rice. One of our staple dishes, and tasty as always.

- Thursday was my turn to cook, and I prepared another favourite of ours – can you guess which? Exactly – curry! This time however, I made a creamy tahini curry with red bell pepper, carrots, zucchini, tomatoes, potatoes, sweet corn, kidney beans, curry paste, tahini, lemon juice, soy milk and soy sauce. - On Friday we made simple vegetable couscous with canned chickpeas. It was super colourful due to the sweet corn, carrots and zucchini, and very tasty. Similar recipe: here and here.

- On the weekend we made a lovely carrot & pea spring soup as well as our first focaccio with tomatoes and garlic! Yum. And of course, we also had our usual Sunday pancakes as well as some scrumptious avocado chocolate truffles after a trip to the local flea market and a visit at our little tree baby's. What more can you ask for? :)
