Hey guys,

I apologize for missing out on calendar week 06 and 07, but to be honest those were a bit of a mess (birthday dinners, eating out, vacation trip), so it didn't make much sense to me to share that with you. But now I'm back with another week menu!

What's on the menu?

- On Monday we made one of my favourite lazy day dinners: oven roasted vegetables (potatoes, carrots, sweet potatoes, zucchini, garlic) with a homemade bean sauce as dip – hummus would have been great, too, though!

- On Tuesday we had a little get-together with our room mates, where we cooked and ate and play a board game. So the easiest and most fun thing to do was a tortilla wrap buffet, so every one could fill their tortilla with their favourite filling. I went for a vegan option of course and filled my (wheat & flax seed) tortilla with homemade hot bean tomato salsa, spicy walnut & red bell pepper spread, lettuce, sweet corn, red bell pepper, rice, fried smoked tofu and cucumber. Soooo good! I ate way too much that night, haha!

- On Wednesday we didn't have much time to cook and went for quick pasta (a green spinach kind) with the rest of the bean sauce from Monday, and loads of veggies (zucchini, carrots, broccoli). Yum.

- On Thursday we made a Mediterranean potato mash (with sun-dried tomatoes, herbs and lettuce), paired with chickpeas and vegetables. Simple and satisfying.

- On Friday I made one of my boyfriend's favourite: Indian lentil dahl with sweet potato and jasmine rice! This one is always a success and a true comfort food. Similar recipes: here and here.

- On the weekend we made homemade peanut butter (to eat with our pancakes) as well as Niomi Smart's creamy leek + celeriac pie and the squash pizza (but with sweet potato instead of squash) from her recipe book Eat Smart. Yummy, yummy!
