Quick tricolor ice cream without ice cream maker

Preparation time: 15 mins + 3 hours freezing time
Main ingredients: banana, coconut, blueberry, raspberry
difficulty level: easy
serves: 1-2
suitable for: vegan, lactose-free, gluten-free, nut-free, paleo, raw food, and delicious "even so"

I'm not patriotic (nor am i a citizen of the United States), but i do love a good reason to make some ice cream :) So this time my ice cream is tricolor themed.

On July 4th it will be hot, and what's more perfect to enjoy watching trash explode in the sky than a cooling bowl of tricolor ice cream in your hands? ;) Another cool idea would be to make tricolor popsicles using the same fruit as in this recipe, but just blending them up unfrozen into a smoothie-like consistency and layering them up in popsicle molds! But that's a whole nother story.

Okay, i think NOW i tried pretty much every possible variation of combining Raspberry ice cream, Chocolate ice cream and Matcha ice cream, haha! May i present to you this amazing bowl of Raspberry + Matcha Mint Ice Cream, also known as UNICORN ICE CREAM!

These babies are the bomb. Not only are they super quick and easy to make (a couple of minutes tops), they're also one of the simplest, yummiest raw treats that i know. Only two ingredients: dates & coconut.

This recipe was inspired by the wonderful Steph (one of THE most amazing, inspiring young vegan humans on instagram!). Since she didn't provide any instructions nor exact ingredients for her recipe (other than the two i listed above), i had to come up with my own ratio of the two. 

And it's a marriage. A beautiful, made-for-one-another marriage.

Or to put it in Steph's words: it's the perfect snack "when I'm in a hurry, when I'm bored and want to snack, when I'm cramming for exams and need a midnight snack, when I need a pre workout snack, and when I need something to brighten my day and make me happy".

Even though i ate raw vegan for a year or so, i had never tried to make or eat raw vegan tacos! But that has changed. They have become my most recent obsession, i think... oh well.

"Now what the heck is Chocomole?", you might be wondering. "Is it really guacamole but with chocolate?!"

Basically, yes.

This, my friends, is chocolate pudding (raw vegan, dairy-free, 100% plant-based) and it is made of only 3 things: avocado, banana, cacao powder all mashed together. Well, and 1 tsp of sweetener and a pinch of spices, but that's completely optional. I just had a super ripe avocado lying around in the kitchen, and a super ripe banana. Now i got a nice bowl of CHOCOLATE PUDDING waiting to be devoured, how awesome is that?!

Okay, don't laugh at me but i think i found my new favourite - best! - brownie recipe so far (yes, another one)...

Normal brownie ingredients? White flour, white sugar, butter, and cocoa or chocolate. What're those gonna do for you?! Make you sleepy and gain weight. These brownies: completely free of butter, milk, eggs, grains and baking heat. 

This recipe is completely unprocessed - at least not in the sense of being commercially prepared for ease of consumption (while it is processed in the sense of being chopped by a food processor, and it is extremely easy and convenient to consume, haha!). Anyway, these Walnut Brownies are raw, vegan, gluten-free and incredibly moist due to the nuts, super chocolatey and rich. Yummy in my tummy, good for my body (and yours too). Nom nom nom!
