To be honest, I've never been a massive fan of apricots. They taste rather bland compared to sweet peaches, and sometimes the texture of their velvety skin and flesh is just... weird. Apricots are a little thicker and heavier tasting than a peach, and sometimes slightly tart like a plum.
But in ice cream form their taste can be perfectly paired with the sweetness of maple syrup and the crunchiness of homemade granola :)

A while ago I came across a recipe post for banana split cupcakes (not vegan), and it made me thinking: why not turn several dishes into a "banana split"?! And the first thing that came to mind - besides vegan banana split cupcakes - was OATMEAL.
So I ran to my computer and googled "banana split porridge/oatmeal", and surprisingly there were no recipes of the sort that I was looking for! So of course, I had to make one myself :)
This Banana Split Oatmeal is dairy-free, decadent and delicious! This can be eaten either as a healthy dessert for 2, or as a slightly richer breakfast for 1. Goes without saying, I had mine as breakfast for one, hehe.

Cinnamon ice cream is one of my boyfriend's favourite ice cream flavours, and since it's our monthly "anniversary" (yes, we still celebrate that on a small scale!), what's more fitting than homemade cinnamon ice cream! Spiced up with a bit of Maca powder for its said aphrodisiac properties ;)

Sometimes i love to indulge in a rich chocolate overdose *, but right now i'm in the mood for something light. Fresh. Fluffy. Airy. So i thought i'd whip up these lemon and poppy pancakes that seem such a British thing to make :)
Make sure to use real lemons as opposed to bottled lemon juice! Contrasting the tartness of the lemons with the sweetness of sugar and vanilla, this pancake recipe is a perfect balance and slightly less filling. Superb for a summery Sunday.
