Cold days call for cosy afternoons with a gingerbread chai latte! This recipe is a healthy version of common drinks with loads of sugar and fatty whipped cream on top (*cough* Starbucks *cough*). It's sugar free, easy to make, and vegan. Perfect for those days when you want to cuddle on your couch and enjoy something sweet but guilt-free!


GINGERBREAD CHAI LATTE

Preparation time: 10 mins
Main ingredients: almond milk, black tea
difficulty level: easy
serves: 2
suitable for: vegan, lactose-free, gluten-free, soy-free, nut-free, sugar-free


Ingredients:

1 cup (250ml) water
1 black tea bag, or Roiboos tea for caffeine free version

1 cup (250ml) unsweetened almond milk
4 dates, deseeded
1 tsp cocoa powder
2 tbsp gingerbread spice *
1 tsp vanilla extract

about 1/2 cup (125 ml) unsweetened almond milk for frothing

optional: 1-2 tsp 100% pure maple syrup

* to make your own homemade gingerbread spice blend, check out the recipe below!


Instructions:

Add 1 cup almond milk, dates, cocoa powder, gingerbread spice and maple syrup to a blender or food processor. Blend until smooth and frothy. 

Place 1 cup of water in a small saucepan, along with the tea bag. Add the blended milk mixture to the saucepan, and heat it up.

Once the gingerbread milk is hot and about to boil, pour into a mug or glass. Top with a dollop of almond milk foam, and a dash of cinnamon. Serve with gingerbread :)

TIP: To make a coffee gingerbread latte, simply replace the teabag with 1/2 cup fresh espresso!


Make your own gingerbread spice blend:

2 tbsp ground cinnamon
2 tbsp ground ginger
1 tbsp ground allspice
1 tbsp ground cardamom
1 tbsp ground nutmeg
1 tbsp ground cloves
1 tbsp ground star anise
Pinch of black pepper 

Mix all the spices in a small bowl. Transfer to an airtight jar. That's it! 

TIP: Use a 2-inch piece of fresh ginger, peeled and minced, instead of ground ginger for more spice!

To me, an Advent wreath is one of the simplest ways to bring the Christmas spirit into your home. This isn't your typical red and green Advent wreath but one with a neutral colour palette and some gold and red detail. You could use this tutorial on a hanging wreath, too!

This is actually the very first Advent wreath I DIYed at home, but I'm actually pretty pleased with the way it turned out. What do you think?



IT'S PARTY TIME!

Hello everybody! How are you keeping up? I felt like I was getting sick a couple a days ago (ate too much cake and Christmas sweets, hot chocolates, crisps... whoops) but then I made an effort to drink loads of tea and hot water with lemon and ginger, ate as many fresh fruits and veggies as possible, added turmeric and ginger to any breakfast I made, and now I'm feeling good again! 

Anyway, this week I'm featuring two sort of seasonal crafting projects, as well as two "health" related posts.

Yesterday I met up for lunch (and cake 😍) with my mom, the wise owl, and we talked about anything and everything, as always. We talked about my recurring feelings of insecurity, of loneliness, of being caught in this roller coaster of emotions, of ups and downs, again and again. I want to share with you what my mom said to me when I told her that I felt like I kept falling back into negative thought loops, like all the work I had already put into dealing with my personal issues didn't make any difference. 
This is what she said:

You know, our mind is like a garden. You can't lay out perfectly neat flower beds and expect them to stay like that. The weeds will come, and they will always come back, no matter how often you pull them up. It won't do you any good to expect them to stay away. It also won't help if you come to the conclusion that removing the weeds won't make any difference. What you can do instead is pull up the weeds regularly – don't wait until the entire garden is completely overgrown. And just like you have to cultivate your garden, you also need to cultivate your mind. Don't wait until you are completely caught up in the tangles of your mind. Instead, check up on your mind regularly, and whenever you notice a destructive thought, pull it up.

I really like the image of the "garden of my mind" that my mom created. It reminds me of something similar the Indian writer Ritu Ghatourey said:
"Our mind is a garden, our thoughts are the seeds, you can grow flowers or you can grow weeds."

In other words, you are responsible for the thoughts you cultivate in this ever growing garden of your mind. You are the one to choose which thoughts are to stay and bloom, and which are to be removed. I find this quite hard to grasp, but it is in fact your choice to either accept or refuse thoughts and beliefs like "I am worthless" or "I am not beautiful" or "I am not good enough". These are the weeds you will have to pull up again and again before they undo all your hard work. Otherwise they will outgrow you and make you feel miserable, ugly, insecure, worthless... 

For the next 24 hours, think of yourself as a "thought harvester", or the gardener of your own mind. Plant empowering thoughts, and get rid of suffocating weeds. Remember that a thriving garden needs fertilizer. So provide your mind with nourishing content such as inspiring books or podcasts, acts of self love (from daily affirmations to pamper routines), morning meditation, gratitude journaling, and conversations with like-minded people. 

Take care of that garden of yours. It's not easy, but it's worth it :)
