Are you all busy with Easter preparations? I know I am! Tomorrow is going to be a day spent in the kitchen because my boyfriend and I will not only bake a carrot cake and chocolate cupcakes for Easter, but also prepare an Italian / Mafia themed three course dinner for another Murder Mystery Dinner party on Sunday :)

if you are looking for some ideas on what to cook for lunch or dinner, here's what I ate last week :)

If you are a warm breakfast eater, eating oatmeal every morning can become quite boring over time. So here is one of my favourite ways to switch up my usual porridge, and turn it into something that almost feels like a desert. Vegan, gluten-free and wholesome as always :)

BTW: I'm actually eating oatmeal while typing this post, haha!

Easter is just around the corner, and we're sharing a couple of Easter themed posts this week! It was hard for me to pick a favorite this week, these DIY Bunny Mason Jars looked so cute and Easterly, but then I decided to go with something that fits my own blog content and interest more, and that's this homemade Matcha Green Tea Salve for Youthful Skin from Happy Mothering :) I love matcha powder in smoothies and ice cream, but I never thought of using it for a salve! But it makes sense because it's so high in antioxidants.

Hello foodie friends, 

are your up for another weekly meal plan? I accidentally skipped last week's meal plan because my boyfriend visited me over the weekend, and I totally forgot about it! 

I've been feeling quite stressed lately because there's so much I want to do but there's just no time... it's making me a little anxious. Blogging is one of the things I want to do more of. As is reading, and writing, and spending time with loved ones... sigh. Cooking is one of the very few ways I still have to express myself in a "creative" way, so here's what I cooked last week! :)

It's an apple pie kind of day today. Or should I say, a Pi kind of day? 'Cause today's date is 3.14.2018, and 3.14 equals the irrational number pi... get it? Yeah, it's a really nerdy thing to celebrate, I know. But still! A great excuse to eat some pie today, don't you think?! :)

My boyfriend and I made this rustic whole grain apple pie for my aunt's birthday last weekend, and it turned out delicious, especially due to the hint of lemon! It's wheat-free, low in sugar and vegan, of course. 


VEGAN APPLE PI(E)

Preparation time: 1 h 30 min
Main ingredients: apples, spelt flour, applesauce
difficulty level: easy
makes: one 11-inch pie
suitable for: vegan, lactose-free, wheat-free

Ingredients

Crust
3 cups (400g) spelt flour - we used whole grain but that's optional!
1/3 (75g) raw cane sugar
1 package (15g) baking powder
2/3 cup (150ml) soy milk
1/2 cup (melted) (100g) vegan butter, softened
zest of 1 organic lemon

Filling
5 cups (about 600g) apples, peeled and cored
1 1/2 cups (400g) unsweetened applesauce
3 tbsp raw cane sugar
1 tsp cinnamon
1/2 cup (60g) ground almonds
1-2 tbsp fresh lemon juice


Instructions

For the dough: Place flour, sugar, baking powder, and lemon zest in a large mixing bowl and whisk to combine. Add soy milk and softened vegan butter or margarine. Use an electric whisk or your clean hands, mix until the mixture comes together into a rough ball. Divide the dough between 2 large pieces of plastic wrap, and chill in the fridge for 30 to 60 minutes.

For the filling: Meanwhile, peel and core the apples. Cut into 1/2-inch-thick slices, and toss with sugar, cinnamon, almond meal, and lemon juice in your mixing bowl. Set aside.

Grease your pie dish. Pre-heat oven to 170°C / 340°F.

On a lightly floured surface roll out one ball of dough into an even disk, large enough to cover your entire pie dish (in my case 11 inches). Fit the dough into your pie dish and trim the edge. Stir together the apple mixture and the applesauce, and transfer to your pie shell. 

Roll out the remaining dough disc into another 11-inch round. If you are going for a classic lattice crust pattern like I did, cut the dough into even stripes and arrange accordingly. I followed this Herringbone Lattice tutorial. Place your pie crust on top of the filling, and press the edges to seal. You can also add some decorative cutouts such as little leaves or apples, or whatever you have at hand. 

Place the pie dish in the oven, and bake for at 20 minutes. Then cover the dish with tin foil, and bake until the pie is golden and the filling is bubbly, about 40 minutes. Allow the pie to cool completely on a wire rack before slicing and serving. Whipped cream, ice cream or vanilla custard all go great with a piece of apple pie :)



 To celebrate Pi Day let's all eat some PIE! :)

Hello friends, I hope you're ready for an egg-celent Easter recipe! Haha...ha. But seriously, these two healthy and delicious vegan truffle variations make for great dairy-free Easter eggs or for a little homemade gift in general.

You can either use a chocolate mold to create filled Easter eggs, or simply roll the filling into balls / eggs, and cover it in chocolate.

BTW: If you haven't noticed yet, I've shot these photos with a different kind of camera - a better one, and I'm absolutely in love with it! I love my good ol' Canon 400D which has served me well over the past seven years, but ever since I borrowed this one (Canon 77D) from my uncle, I realized that I need to upgrade my camera (lense) because the new ones are so much crisper, crystal clear, with a lovely aperture blur, and just wayyyy better! Just so you know, these photos are unedited!! Definitely on my birthday wishlist now :D

GIRLS!

(Well, actually women, not girls ...)

It's International Women's Day today, and what better opportunity to celebrate girl power and awesome women! 

Last year the influencer Zoella made a blog post called Who Run The World? where she shared which women have had a positive impact on her life and inspire her on a daily basis. I want to turn this into a TAG so that everyone can do the same. Instead of comparing us to each females, judging them, and competing with them, let's appreciate, uplift and empower each other! :)

Jenny-Mai Nuyen – This German Vietnamese author wrote her first book at the age of 13 and now lives as a full time writer. She is the one who first inspired me to become a "professional" writer and gave me the courage to keep writing, to follow my heart and pursue my passion. (Oh, and she's also an amazing painter! So much artistic talent!)

rupi kaur – Although I'm usually not a big fan of poetry, this phenomenal Indian-born Canadian writer and illustrator and her very raw and powerful poetry book milk and honey had a huge impact on the way I perceive my body, my femininity and my overall sexuality. I love her clear and straight-forward voice.

Kate Morton – Yet another author, which probably doesn't come as a surprise since I am an aspiring novel writer myself. I adore her elegant prose, her complex characters (most of whom are female, by the way) and her skilfully entangled plots, which turn every single book of hers into an enthralling and beautiful read. There's something truly magical about the atmosphere she creates in her stories.

Michelle Obama – I'm not somebody who is particular interested in politics, but the former (first African American!) First Lady changed that. Being an advocate for poverty awareness, education, nutrition, physical activity and healthy eating, she is a true role model for every woman (and man) out there, not to mention her impressive career, her elegant style, and her deep love for her husband and family.

Emma Watson – When I was younger my biggest dream was to be like Emma Watson one day. She is gorgeous, she is smart, and she uses her prominence to address women's rights issues, e.g. in shape of the UN Women campaign HeForShe, which calls for men to participate in gender equality.


My Mum – I mean, look at that photo! She's basically me (personality-wise) but with brown hair and darker skin 😄 I truly believe that my mum is the reason I'm the emphatic, powerful, bright woman I am today. She always shows me to be unique, to follow my own path, to question everything, to live mindfully and to stay true to myself. Also, she is one of the most wise and spiritual people I know, in the best way possible.
 


Last but not least I try to be my own role model in terms of embracing my soft, emotional, empathetic and passionate feminine energy, and tapping into that "girl power" :) Here's to us women, each powerful in their own way!

Hello again. I'm actually quite proud of myself for managing to cook for myself even though I don't enjoy cooking as much when it's just for myself :) It shows once again that everything is just a matter of habit.

Plus, it's great to prevent or ease any colds you might catch during this hardest winter month. So far, I haven't got sick at all this winter *knock on wood*
