Polenta Porridge (V + GF)

If you are a warm breakfast eater, eating oatmeal every morning can become quite boring over time. So here is one of my favourite ways to switch up my usual porridge, and turn it into something that almost feels like a desert. Vegan, gluten-free and wholesome as always :)

BTW: I'm actually eating oatmeal while typing this post, haha! 


POLENTA PORRIDGE

Main ingredients: oats, polenta, banana
difficulty level: easy

suitable for: vegan, lactose-free, gluten-free, soy-free, sugar-free, low-fat

Ingredients

2 ripe bananas
1/2 cup oats (gluten-free if that is a concern)
1/2 cup polenta
1 cup water
1 cup plant-based milk (e.g. almond milk)
a dash of cinnamon

toppings of your choice 
 

Instructions

Mash your banana. In a small pot, heat up the mashed banana, as well as water and soy milk. When it comes to a boil, add polenta, oats, and cinnamon. Stir, and reduce heat to minimum. After about 2 minutes, switch off heat, close lit, and let simmer for 5 to 10 minutes.

When it's done, the consistency of your polenta porridge should be super creamy and thick, almost like a pudding. Fill into your favourite bowl and sweeten and garnish to your liking (I love maple syrup, some more cinnamon, banana slices and fresh or frozen berries - or some crushed nuts, cocoa nibs, and a bit of nut butter).
