Hey lovelies, here's another weekly meal plan for you! Plant-based and healthy, as always. Well, mostly. It's Christmas time after all :)
↠ If you want to make your own menu for the week, you can download and print the template over here.
What's on the menu?
-
On Monday my boyfriend made a creamy pumpkin soup with ginger and potatoes. Similar recipe: over here.
- On
Tuesday I made corn pasta with celery carrot tomato sauce. Similar recipe: over here.
- On Wednesday we didn't cook at all, but instead got a vegan falafel wrap at a local place that is super yummy! We also made vegan chocolate and banana stuffed puff pastry pies at home – not the best day of eating, health-wise, but super good ;)

- On Thursday my boyfriend made our standard veggie curry with zucchini, bell peppers, chickpeas, carrots, broccoli, and basmati rice. Similar recipe: over here.
- On Friday we made another veggie lasagna with basically the same ingredients as the curry the day before, lol. Oh, and as a sauce we used nutritional yeast mixed with tahini, salt and soy milk! Similar recipe: over here. I also baked a bunch of vegan peanut butter chocolate chip cookies with a friend of mine – we already baked these last year, and they are soooo gooood! :)
