Weekly Meal Plan CW 03

Another "what my boyfriend and I eat in a week", at least dinner-wise :)

What's on the menu?

- On Monday my boyfriend and I made a super delicious meal with coconut millet (cooked with coconut milk and raisins), curried glazed carrots, and red lentils. Yum! Similar recipe: here.

- On Tuesday we made a scrumptious potato curry with coconut milk, carrots, leek, and zucchini. Similar recipe: here.

- On Wednesday my boyfriend made a spicy tofu and cauliflower curry with basmati rice. Similar recipe: here.

- On Thursday my boyfriend made this classic garlic + lemon hummus as well as this caramelized garlic + balsamic hummus, while I made puff pastry pies filled with tofu, spinach, sun-dried tomatoes, olives and walnuts, as well as my dark chocolate avocado brownies because we had a bunch of friends over for my little "farewell" evening before moving to another city.

- On Friday I made polenta slices with creamy mushrooms, zucchini and bell peppers.

- On the weekend we made our two favourites: vegan pizza (similar recipe:  here) and suuushiiii

My boyfriend, my parents and I also went out to eat at a Philippine restaurant on Sunday (it looks like a Bedouin tent with "desert sand" on the floor and seat cushions, and you eat with your bare hands – so fun!) where we stuffed our faces with loads of yummy Asian curry variations. Best weekend ever!! :)
