Weekly Meal Plan CW 44


Hi guys,

now that the decluttering challenge is over, I'm back with my weekly meal plans! Missed these! So here's what my boyfriend and I ate last week – enjoy :)

What's on the menu?

- On Monday we made a simple dish of boiled potatoes, spinach (cooked in coconut milk with garlic and onion, salt and pepper – so good!), and our homemade black bean burger patties. Yum!

- On Tuesday I whipped up another quick n easy meal: corn pasta with a creamy lentil mushroom sauce (made with red lentils, brown mushrooms, garlic, onion, zucchini, red bell pepper and coconut milk). Similar recipe: here and here.

- On Wednesday we made Amy's Moroccan lentil stew which is always a favourite in our house :)

- On Thursday we made a millet paella with zucchini, red bell pepper, canned tomatoes, cauliflower, carrots, and chickpeas. Similar recipes: here and here.

- On Friday we decided to make my vegan Shepherd's Pie which has also turned into one of our favourite dishes around this time.

- On Saturday my boyfriend made a creamy pumpkin potato soup (similar recipe: over here). On Sunday we had the usual oat banana pancakes, as well as polenta slices with veggies.
