Weekly Meal Plan CW 14

What's on the menu?

- I welcomed the week with a dish that was inspired by some Native American food I ate at a Food Festival last weekend. Basically, it was curried fried rice with sweet corn, green peas, kidney beans (black beans would also work great), zucchini, green beans and salted roasted peanuts. I don't know if this is actually a Native American dish, but it's definitely delicious.

- On Tuesday we were lazy and made a bunch of vegan tortellini (filled with smoked tofu and vegetables) with homemade broccoli bean sauce, yum!

- On Wednesday we finally made vegan sushi after a veeery long time of sushi abstinence. Filled with short-grain rice, avocado, cucumber, carrot and homemade hummus. Sooo good!

- On Thursday we had a big batch of oven-roasted vegetables with the rest of the hummus. Like I said last time, oven-roasted vegetables are an all-time favourite in our kitchen.

- On Friday we had a big barbecue with loads of grilled vegetables, yum! Grilled sweet corn with vegan butter and salt is the best. Oh and potatoes with rosemary and thyme en papillote, of course!

- On the weekend we had bread rolls, vegan rice pudding and vegan pizza. Simple, but best.
