Besides the vegan Lembas bread and Bilbo's poppy seed cake that I made for our Fantasy Murder Mystery Dinner last winter, this is probably the nerdiest baking I've done so far. And I love it!! Don't you?

For all of you who might not recognize this lady – it's Princess Leia from Star Wars (RIP Carrie Fisher!), and those cinnamon chocolate buns look just like her famous hair buns!! Besides from fitting perfectly onto Leia's head, those vegan yeast buns taste wonderful, too. My non-vegan flatmate tried one of them and immediately ordered 20 more, haha!

VEGAN PRINCESS LEIA BUNS (CINNAMON & CHOCOLATE)

Preparation time: 30 mins (+ 1 hour rising time)
Main ingredients: flour, cinnamon, nuts, cocoa powder
difficulty level: easy
makes: about 15 buns
suitable for: vegan, lactose-free, wheat-free

Ingredients

Dough:
4 cups (500g) spelt flour
1/4 cup (50g) brown sugar
1/2 tsp salt
1 package (9g) dry yeast
1 cup (200ml) soy milk
1/3 cup (80g) margarine or vegan butter

Filling:
1 cup dates
2/3 nuts (I used almonds)
4 tsp ground cinnamon
2 tbsp unsweetened cocoa powder
2 tbsp unsweetened soy yogurt (you can use your own homemade soy yogurt)
2 tbsp dessicated coconut
splash of soy milk, if needed
pinch of salt


Instructions

To make the dough: In a large mixing bowl, combine flour, sugar, yeast and salt. Gently warm up the soy milk and add in the margarine. Whisk until dissolved.

Add the the milk margarine mixture to the mixing bowl and knead thoroughly. Stop kneading when the dough doesn't stick to your hands any more – about 10 minutes. Cover the dough with a kitchen towel and set aside in a warm place for about 1 hour.

In the meantime, go ahead and make your cinnamon chocolate filling!

To make the filling: Simply add all ingredients except for the soy milk to a food processor or blender and pulse until a sticky consistency forms. If the mixture is too thick, add a little soy milk.

Preheat oven to 200°C / 400°F. 

When the dough has rested for an hour and doubled in size, knead once again. Flour your counter top, and roll the dough flat into a rectangle. Generously spread the cinnamon chocolate paste on the surface of the rolled out dough with the back of a spoon. Beginning at the longer side, roll the dough tightly so that it forms a horizontal "dough snake". 

Using a sharp knife gently cut the "snake" into 1-inch slices. Place onto a parchment lined baking tray, spring-form pan or a pie pan, leaving enough space between the pieces to rise while baking.

Bake in the oven for 10 to 15 minutes. Allow to cool and add some chocolate glaze if you fancy. Or pretend you have Leia's bun by holding them next to your head. That's what I did anyway.
