Usually I associate waffles with Christmas and Christmas markets, but they can actually taste very light and summery. These were made for Father's & Mother's Day with my parents, and they are the perfect summer afternoon treat: crispy, fluffy, and slightly sweet.

THESE ARE MY FAVOURITE WAFFLES EVER!


Thanks to the inherent sweetness of the banana and the plant milk there is no need for any additional sugar. This makes these waffles absolutely suitable for children or as breakfast.

If you feel like boosting your body with vitamins and fresh juice, start your day with a frothy breakfast smoothie like this one! I try to go by the motto "eat your fruit, drink your veggies" as smoothies make it easier to get in your daily greens that you might not like eating by themselves.

The basil adds a very tasty kick to your average smoothie.

EDIT: This recipe has been updated because I wasn't completely happy with the ooey gooey original version any longer. This one is still moist, but nice and fluffy – and still vegan and sugar-free of course!


When life hands you over-ripe bananas ... you make banana bread!

I mean, seriously. What do you do when your stored bananas are so over-ripe that they're practically black from the outside? In my house, we either freeze them for nicecream, or we make banana bread. 

This time it was time for some simple and delicious banana bread. And it turned out perfect!

At this point there are already several recipes for banana bread on my blog, such as my gluten-free buckwheat banana bread and my peanut chocolate swirl banana bread – but this very basic banana bread has just stomped all other banana bread recipes into the ground. Why? Because it's sweet, it's soft, it's lovely moist, fluffy, and it's completely sugar-free. In other words: It's super healthy AND super good!! What more do you want?!

I remember those early summer days as a child when i was over at my best friend's garden where they had fresh rhubarb growing in one of their patches, and we used to take a stalk of ruby red rhubarb, dip it into sugar and eat it just like that. The sugary sweetness counterbalanced the sourness of the rhubarb, kinda like eating fizzy powder!

So when i saw the first fresh rhubarb in our supermarket, i had to get it and pair it with something sweet. Cake it was!

This cake is, believe it or not, sugar-free except for the raw cane sugar that i sprinkled on top. The sweetness comes from the pears and the applesauce (instead of pears, you could also use sweet apples or peaches), which goes wonderfully with the soft, slightly sour baked rhubarb.
It's the perfect spring & summer cake: Light, fresh, and in pretty pastel colours!

It feels like ages that I've made brownies! (not counting the blondie-brownies (brondies) I made last September). So it was time for another brownie session. And this time, I wanted to incorporate fruits into the batter!

Luckily, we were doing a buffet at work last week, and I was responsible for dessert. Naturally my first thought was that I'd love to make some vegan brownies because they're easy to make, easy to transport and always a winner! (My supervisor was so nice, when she heard that I was vegan she immediately offered to make tofu shashlik, so cute).

So here they are: my cherry chocolate brownies!

Gooey, fruity and super chocolaty.
