This was actually only my second attempt at making scones (here's what my first attempt looked like - not too bad, right?), and this time I went full-scale with this slightly more decadent scone variation :)
This is perfect for a relaxed Sunday breakfast on the balcony or in the garden, with a cup of tea or a glass of fresh orange juice. Oh, and it's super easy to prepare. Just a little more than half an hour to make these delicious orange walnut scones!

VEGAN ORANGE WALNUT SCONES
Preparation time: 35 mins
Main ingredients: flour, orange oil, walnuts
difficulty level: easy
makes: 8-10 scones
suitable for: vegan, lactose-free, wheat-free, soy-free, low-sodium
Ingredients
3 cups wholegrain spelt flour
3 tsp baking powder
1/4 cup orange oil OR any neutral oil
1/4 coconut oil
1/4 cup coconut sugar (or raw cane sugar or brown sugar)
2 very ripe bananas, peeled and mashed
2 tbsp flaxseed, ground
1/2 cup chopped walnuts
Instructions
Preheat oven to 200°C / 390°F (fan-forced).
Line a baking sheet with parchment. Mix all ingredients in a large bowl. Use your clean hands to knead and form a ball of dough. The dough should hold together when squeezed, but still be clumpy. Place the dough on the parchment lined baking sheet, flatten the ball into a round disc and use a sharp knife to cut the disc into 8-10 wedges. Optionally, brush the tops lightly with the coconut milk or soy milk.
Bake for 15-20 minutes, or until the pieces pull away from each other and are slightly browned on top. Allow to cool on a wire rack before serving.
We ate ours with some margarine and seabuckthorn orange jam, yum :)
