5-MINUTE MUESLI aka my Go-To Breakfast (at the moment)

I think my food photography skills have improved noticeably ever since last December, don't you agree? 


My favourite breakfast lately has turned from nicecream to porridge to GRANOLA! Just plain simple, quick muesli made of warm oats, crunchy granola* or cornflakes, soy milk and banana. 

This, along with porridge, is also my favourite TRAVEL breakfast, such as hiking, camping, backpacking, or my up-coming long-distance flight to Thailand :) because it is nutritious, lightweight, high in calories, and easy to store. And you don't need any equipment except a spoon and a bowl. You can make and eat your muesli right before you take off for your hike or ride or whatever you're doing, or you can prep it the night before bed and it's ready in the morning.

What's especially great is that you can just pack the necessary ingredients separately (one small bag for oats, one for granola, one for seeds, one small bottle of soy milk, one bottle of water...) and take them with you, where ever you go.

Main ingredients: oats, banana, soy milk
difficulty level: super duper easy
makes: 1 large bowl
suitable for: vegan, lactose-free, gluten-free, nut-free, raw food, low-fat

1/2 cup instant oats (use gluten-free oats if intolerant to gluten!)
1/4 cup rolled oats (see above)
1 cup warm water (i prefer my breakfast not to be refrigerator-cold)
1 cup soy milk (or any other plant-based milk such as almond milk)
a gooood handful of granola*, e.g. homemade granola (the more the better!)

or any other fruits you like


handful of raw cacao nibs (very recommended)
pinch of cinnamon


Super simple: just boil some water, place your oats and soy milk into a bowl (my favourite big breakfast bowl! actually it's my boyfriend's, but i kinda pinched it from him), and pour the warm water over it. This has two advantages:

(1) The oats will soak nicely and double in size.
(2) Instead of a cold breakfast, which is said to slow down your digestive system for the rest of the day, you will have a warming, hearty breakfast providing you with enough energy, nutrients and stamina to tackle the day.

After soaking your oats, it's just about throwing fruits and fun fixings into your bowl! For me, that's granola, banana (cut into flowers using a cookie cutter - i've really started to love this procedure! i actually find it kind of relaxing) and other fruits such as berries and grapes. You could also add nuts, dried fruits, chia seeds, dates, puffed rice, quinoa pops, ...

For those of you with a sweet tooth (like me): Get a chocolaty kick by sprinkling your muesli with a handful of raw cacao nibs! You might not even need coffee then :) Instead, maybe have a glass of fresh orange juice or warm lemon water!

* For this recipe i'm using a store-bought oat spelt crunchy granola (which is only sweetened with rice syrup and the healthiest i could find at our health food store), but you can easily make your own of course, such as my homemade granola

I don't really know why, but i'm actually obsessed with the crunchiness of granola at the moment, haha! Plus the sweetness of banana + plant mylk + chocolaty cacao nibs = heaven!
