Honey Walnut Ice Cream (raw & vegan friendly)

Quick 3-ingredient ice cream without ice cream maker

Preparation time: 5 mins + 3 hours freezing time

suitable for: vegan, lactose-free, gluten-free, paleo, raw food, and delicious "even so"

This must be my most recent ice cream favourite! This must also be one of the creamiest whipped up nicecreams (nana ice creams) i've ever made! And the only ingredients are banana, walnut and honey (or agave syrup to keep it vegan). So simple! And so good.


3 large ripe bananas
about 1 cup (100g) raw walnuts, crushed
1 heaping tbsp honey (or maple syrup or agave syrup or rice syrup for vegans)

- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)


You know how it works: First, prepare your bananas as you would for a basic banana ice cream (break your bananas into pieces, let sit in freezer for a few hours, put frozen banana pieces into your blending machine and blend until creamy smooth).

Now add the crushed walnuts (crush them either manually using mortar and pestle, or simply blitz in your food processor or blender). Then add your prefered sweetener. I use organic cold-spun honey, as i am not fully vegan in the sense that i do eat honey occasionally - but you can use which ever sweetener suits you. I recommend maple syrup because i'm pretty sure that walnut and maple go great together!

Blend again until everything becomes a stiff but creamy mass. Using a spatula, spoon or ice cream scoop, fill everything into a nice bowl and scoop away immediately! :)
