Sweet and savory Lentil Pancakes (vegan & gluten-free)

suitable for: vegan, lactose-free, gluten-free, nut-free, and delicious "even so"

This is a more "oriental" take on pancakes because it contains lentils, turmeric, cinnamon and in my case plums. They were a bit on the dry side, but nevertheless quite tasty, and the best thing is, you can eat them either sweet or savory, which ever way you prefer!

Ingredients

300g ground red or brown lentils (i used brown lentils)
1 tsp salt
1 tsp turmeric powder
1 tsp sugar beet syrup or other sweetener of choice (i also added 1/2 tsp stevia powder)
500ml carbonated (!) water *
Pinch of cinnamon
Pinch of sweet bell pepper powder
2 tbsp vegetable oil (i used olive oil)
more oil for frying

Also:
1 tsp peanut or cashew butter or tahini to drizzle
fresh plums or dried figs or dates to garnish

*this replaces the eggs in conventional pancakes!

...and finally - they're done! Lentil pancakes, woohoo!

Instructions

Pour the carbonated water into a large mixing bowl. Constantly stirring, add the ground lentils, salt and sweetener, stir stir stir but not too fast because you don't want the carbon dioxide to "dissolve". Set aside for 20 minutes. Then add the 2 tbsp (olive) oil and stir again. Heat the oil in a pan, and you are ready to go: bake your pancakes. I got 7 fairly large pancakes out of this (the first one i ate up bit by bit while i was cooking the others, haha! - who else is like this?!)

It's interesting because these pancakes are both sweet and savory, and can therefore be served with a hearty spread (pesto, tahini or hummus for example, or cheese if not vegan) or with something sweet (such as fruit, nut butter, cinnamon, jam, hazelnut spread, sugar beet molasses....). I decided to top our pancake stack with fresh plums, a pinch of cinnamon and a generous drizzle of pure peanut butter. Serve immediately!
